Vegetarian Recipes

Just wondering if anyone has a vegetarian recipe to share. I am trying to cut back on meat, not become a complete vegan. I love rice, beans, veggies--just about any kind.

  • My husband is one of those guys that hates just about anything new, so no one was more surprised than I was that (having been forced to try it) he actually likes TOFU!

    Handled right it's a really good substitute for meat. I often just cube it and add it to soup, for example...another one of our favorite ways to eat it is marinated and then baked or sauteed. Any marinade will do, but here's a tip on getting best results for this method:

    Buy firm or extra firm, drain water, slice it into desired shapes and freeze. When it's thawed it will not only have changed to a sort of cream color, but the texture will have become much "chewier". It holds its shape much better after this treatment, and soaks up the marinade better, too.

    Tofu prepared this way can even be grilled- yum!
  • hbillsmith, that sounds good! Thanks for posting. I am an avid meat eater but this just sounds great and I can actually skip the meat and enjoy it.
  • Mexican Vegetarian Casserole

    Ingredients:

    1 (15 1/4-ounce) can whole kernel corn, drained
    1 (15-ounce) can black beans, rinsed and drained
    1 (10-ounce) can whole tomatoes and green chiles
    1 (8-ounce) container sour cream
    1 (8-ounce) jar picante sauce
    2 cups (8 ounces) shredded Cheddar cheese
    2 cups cooked rice
    1/4 teaspoon pepper
    1 bunch green onions, chopped
    1 (2 1/4-ounce) can sliced ripe olives
    1 (8-ounce) package Monterey Jack cheese, shredded

    Preparation
    Combine first 8 ingredients, and spoon into a lightly greased 13- x 9-inch baking dish. Sprinkle with remaining ingredients.Bake at 350° for 50 minutes.

    We have cut back on meat, but not gone vegetarian. First thing we've done to cut back is to simply leave the meat out or halve it. Examples would be Chinese, can't really tell the meat is gone. Beans, I put about 2" of a smoked country rib, (the fake that is cut off the butt)in a pot of beans. By the time its shredded and the smoke moves through the pot you'll think it still has lots of meat in it. Breakfast, we've cut out red meat and dropped to one whole egg on some mornings and egg whites on the others. Fish would be a bigger part of our diet if I could find good fish. I'm not sure that tainted foreign fish is better than doctored red meat.
  • Me too. Picked up gout I'm my left ankle and meat makes it worse so have cut way back. Only eat a few ounces here and there.

    We do pressure cooker beans about 2-3 times a month. Celery, carrots, garlic, onion can of tomatoes, vegetable broth. Over brown rice.

    Eggplant Parmesan. Stir fry with marinated tofu. Vegetable lasagna, weight watchers cabbage casserole with fake meat crumbles, Shepard pie with fake meat crumbles.

    Quiche once a month.

    Pizza with Mozzarella, fresh tomatoes, fresh garlic and basil is great.

    Stuffed peppers or squash using quinoa instead of meat is good..

    Google vegetarian recipes. You will get a ton.
