What is your Fav thing to make on the road

We do a lot more happy hours while camping than at home so I like to make appetizers. There are many excellent appetizers in the frozen food section of the grocery store. We (I) make potato skins, mozz. sticks, battered mushrooms and meat stuffed pastries in the camper oven. If I don't feel like using the oven, my homemade pepper jelly over cream cheese on crackers or my smoked salmon spread on crackers is always a hit.

Everything else is pretty much business as usual as we eat what we eat at home.
