I like to get a head start on meals before we hit the road, We start out with browned hamburger and bagged frozen veggies in the freezer. In the fridge I will have butterflied chicken breasts bagged in marinade, boiled potatoes, cooked pasta. Hamburger can be added to marinara over pasta, or made into sloppy joe's or tacos or chili, or added to beef RiceARoni. Chicken gets grilled and works with Szechwan veggies and sauce, or sliced for Caesar salad, or chopped for curried chicken salad. Tuna pasta salad with green olives is a staple for us. I also make frittatas with potatoes, onions, and whatever vegetables need using up in the sticks and bricks. I too freeze leftovers in single serving portions because they are so handy when Rving.
