Maybe it's because we have small children, but we have much more elaborate meals at home. Lately, our first night camping has turned out to be take out pizza. It's too hard to set up camp, cook, and take the excited children to the park, pool, attractions, etc. We just grab a pizza in town on the way in. We've only done it the past two camping trips, but it's a huge relief and we'll probably stick with it.
Honestly, we don't spend much time at the actual site itself so our recipes are short and sweet.
Appetizers are typically fruit or cheese..........this weekend it was chips and salsa. Easy, easy.
I like crockpot dishes. A long day at the beach and we come back to dinner already made! This weekend I cooked a ham in the crockpot. I stuck a bunch of cloves in it and marinated it in Vernors and pineapple overnight. Cooked it all day and it was delicious.
We also like crockpot meatball subs: Combine 1/3 cup breadcrumbs, 1 egg and 1 lb burger. Mix into balls, place in crockpot and cover with one jar of favorite spaghetti sauce. Cook on low for 6ish hours and serve in hoagies with mozzarella cheese.
Sometimes I make chicken tacos. 4 fresh or frozen chicken breast go into the crockpot. Cover with 1 jar of favorite salsa and cook 8ish hours. Shred chicken when done.
Over the fire we like spaghetti pockets. Cut frozen garlic bread in half. Place garlic side against pie maker. Add a scoop of already made spaghetti meat sauce to the inside of the bread. Cook over fire for a few minutes each side til the bread starts to get crisp. It is fantastic!!
Dutch oven desserts can get elaborate. We must have tried over a dozen this summer. My absolute favorite has 3 ingredients and no stirring!! It's a basic dump cake:
Put 2 cans of apple pie filling into bottom of dutch oven. Sprinkle liberally with cinnamon. Pour 2 dry boxes of yellow cake mix on top of apples. Cover with lid and bake for about an hour (don't remember how many briquettes to use but I'm sure you can google it).
