You are indeed in the ball park Dave. It's an alkali on an amino acid. I did go back and do a little search and it seems that the consensus is for much less than an hour under the soda. Some combine it with the marinade.
I think I'll stick with separation, but I'm going to cut back on time because I have had some meats want to shred when their cooked in stir fry.
My reasoning in foils is that we like our veggies a little early on the cooked side and getting the meat tender can be a problem for us.
