Wraps

My new favorite travel food are wraps as they take little time, clean up is quick and there are so many great things you can "wrap"
I found this recipe for Tuna Salad Wrap with Fruit and Veggies which we really love
1 can of tuna, add 2 T mayo
4 cups chopped spinach (or lettuce or what you have)
1 large carrot shredded (or not)
1 apple, corded and diced.
1/2 cup mozzarella cheese, shredded
1/4 cup blueberries
4 flour tortillas.

This one is great as you make a bunch and then freeze them for a quick lunch.
1 cup brown rice cooked in 2 cups of water or 2 bags of Uncle Bens precooked rice (any flavor or plain)
2 cans of black beans, 1 can of pinto beans, 1 can of corn, all drained and rinsed
1 can Rotel, any flavor
10 flour tortillas.
1/2 lb shredded pepperjack cheese or if you don't like spicy, Monterrey Jack or what you have.
Mix it all, wrap in tortillas, wrap in plastic wrap and then store in freezer bags.
When you are ready for something quick, you can nuke as many as your need.
(You can use foil and heat in oven also)

  • We also love wraps and often travel with tortillas as our only bread. BLT wraps, buffalo chicken wraps and turkey cranberry wraps are just a few of our faves.

    Plus we love Mexican food so we use them for burritos or quesadillas, too. :)

    Don't forget breakfast burritos. Very versatile.
  • Thanks for the idea. I'm a single RVer, and hate to sit in a restaurant, waiting for a meal while staring into space. So carryout is often my last resort. Your ingredients are available everywhere, certainly fresher, readily available and, with the exceptions of coconut and liver, I'll eat anything. Clean up is a breeze. A satellite dish on the roof of my RV provides entertainment.
    I believe I'll try this at home as well. Beats junk food carryout, and no dishes to wash afterwards.
