Good luck to the FDA getting help from people dense enough to still be feeding their dogs that garbage. My dogs would definitely get Doritos before they'd get any of that jerky stuff, because it is impossible to say who made what, where, or what they may have put in it. Dogs will eat and enjoy anything, as others have mentioned. I've used tortillas in a pinch.
And keep in mind that you, too, have an oven and you can dry all kinds of things in it. Chicken, beef, sweet potatoes.... I used to do bagels when I had them left over. Anything you'd give your dogs can be put in on the lowest setting and dried to jerky. Meat that's properly cooked first will have no risk of e-coli or salmonella. Boil up some chicken and spread it out on a pan and guess what? It will turn into bits of jerky treats!
For the lecithin thing, before you get all wound up about it, keep in mind that this is about the twentieth time that "they" have claimed that they "know" what substance "causes" heart disease.
If the police came out with different suspects for the same crime, one after the other, and said "no, really, this is THE ONE" every time, how long would you keep believing them?
I'm all for scientific inquiry, but take what they tell you with a grain of salt. This is the same discipline that had people giving up butter for decades, in favor of "healthy" margarine full of trans-fats.
