In addition to what ToedToes has said, I'd add that many of you might be surprised at how many people will lie on adoption applications. About everything you can imagine.
They will put down a vet reference for a vet they've never taken an animal to.
They will say they own their home when it turns out the address they list is an apartment. Sometimes it's an empty lot.
They will say they have their landlord's okay to have a pet. A phone call to the landlord yields a definite "no."
They will say they have a fenced yard when they don't.
They will say the dog they want to adopt will be a house dog, but in their back yard is a well used dog house with a bare dirt track worn around it in a six foot radius.
And on and on and on.
Yes, some rescue groups are IMO over the top in their requirements (a blanket fence requirement for all dogs is a pet peeve of mine). But many of the requirements are from hard learned lessons, as is any "distrust" vibe they give off.
