This reminded me of travel back when we had larger dogs (full-size Aussie and a Cattle Dog): as you drive along, you will find nice open areas, like the grassy lawns at Cabelas, for example. We would pull in, find some out-of-the-way spot; and then have a crazed game of fetch for 10 minutes or so, to take the edge off. My dogs had the proverbial "bomb-proof recall", so were off-leash; but if you don't absolutely KNOW your dog will come when called, 50' of paracord will make sure there are no runoffs.
Also - sometimes if you ask the staff at the front desk of an RV Park if they know a place to run your dogs offleash - they will have a spot. An empty field used for rallies/an empty horse pasture/an unused parking lot...
And of course, even if you have to walk 100' to do it - ALWAYS pick up after your pet, since exercise tends to get things "moving"
