All workable cracks of wireless encryption depend upon first intercepting packets going between an AP and a client. With no client, there's nothing useful to intercept.
If the WiFi is unsecured and completely open so the "attacker" could share the Internet connection, it would still be difficult for them to see the user's traffic, whereas it would be trivial if the user were on WiFi.
