My understanding on the Straight Talk plans is that you can buy overlapping data. If you start out with a 60 day card of 7GB and use it up before the 60 days are up... you either wait until the start of the next 60 day cycle or you buy a 30 day card (of whatever amount you want) to keep you connected.
You can set up auto-fill that will add a new plan at the end of the service date of the current plan. I have the ST home phone and I have it set for auto-fill but I will not setup auto-fill for my ST hotspot. I want the flexibility to add more data during the current plan service period if needed.
I know with my ST home phone I let it lapse when I get back to WV from wintering in the south. I have to reactivate it when I get ready to head south again and all that happens is that I get assigned a new number. The ST hotspot says to not let it expire so I do not know what the consequences would be for letting it lapse.
