The only kind you can't simply copy to a thumb drive and use are ones that require you to boot from the DVD such as a Windows install disk. There are even ways to make it so that you can boot from a USB thumb drive using a Windows install disk but it takes a little bit more doing than simply copying it.
Once you copy the contents of the DVD to the thumb drive and run the installer for your software, it will still prompt you to enter your Product key at the appropriate time just as if you were running the installer from the DVD.
As Chris Bryant mentioned earlier, DVD drives are slowly dying out as more and more companies are delivering their software via download.
In the case of a video card, it's usually not even advisable to install the drivers using the included DVD but instead to go to the manufacturer's website and download the most current driver which may have been updated several times since the DVD was shipped.
