I just replaced my Dell XPS with a new Lenovo ThinkPad. It has a 250GB solid state drive, 16 GB ram, Intel quad core I7 fast processor. It is rugged (been using these for years with no problems at work), very light, and comes with a docking station. Cost isn't cheap: about $2k.
The 1TB disk requirement seems a bit high to me. It's possible to get some with 2 drives. I know I had an HP with two (added up to 1.5TB), but the weight and my general unhappiness with HP laptops had me go back to Lenovo.
Consider if you can use an external 1 TB drive (less than $100 for a Western Digital 1TB) for files you don't need every day. You can easily velcro the Lenovo docking station (has the DVD drive in it) in the RV and use the laptop without it for nav. You can velcro the external USB 3.0 (or 2.0 which isn't horrible) near the docking station and have it connected so that all you need to do is drop the laptop on the dock and you have all the disk you want.
The solid state hard drives are great. Also, my Thinkpad came with Win 8 Pro which boots in seconds. I am not fond of the tiles, but I work on the "desktop" which is functionally identical to Win 7.
