It has nothing to do with the "number" of access points in use, it has to do with the amount of traffic each one is requesting. If all those 17 AP's you see are just sitting stagnate no worries, but when they all start requesting large amounts of data that is when interference happens (and not just bandwitch slowdown). Read my previous post about how an AP handles interference.
