If you simply do not take the default and choose your own options you can setup a local account and turn off all (most anyway) of the things going to Microsoft. Microsoft's cloud storage (as any cloud storage) requires a user account so if you go the route of a local Windows user account you cannot use their cloud storage.
I'm on internet forums.. and from what I'm reading... Windows 10 sucks up data because you can't pick, choose or turn off the updates. When you are on the road with limited data available (hotspot) the overages can be a big pain in the neck.
There's too much information being sent out of the Window's 10 ... and you can't control what is coming in. (Is what I've gathered from all the forum info posted.)
Microsoft's business model is still to make money via the operating system and their applications. You have to pay for their office apps, cloud storage, etc.
That's why I use Windows only as a platform without a Microsoft account and live in Google's world where their apps are free and they make money via advertising. Works for me and I have Windows 10 on my four Windows systems and would not consider Windows 7 (or 8.1) now that I am on Windows 10.
