I think I found a solution that may work. Not the quality I want, but it will allow me to run everything on 12v.
This flip down monitor is 25":

And this converter will take the HDMI from the in dash PC (it has an HDMI output) and play on this monitor:

I would much prefer a monitor with an HDMI input, but for the few times per year we want this, it will work fine.
