Most businesses have an unsubscribe link in the fine print at the bottom of the email. Some also have an update preferences link where you can opt to receive fewer emails. I have put these to good use and am receiving far fewer emails these days.
If I were the OP I'd give the dealer the chance to remove the unlisted number from their system. Any salesman should be able to delete it. If they can't/won't there is always the option of blocking their phone number and setting up a spam filter. Also be sure to let them know they have lost your business.
