Our locations will be pretty stable, probably one CG during the winter months and another for the summer so we only need to set up the antenna a couple of times. I'm thinking of a tripod with a dish. I would appreciate comments on how difficult it is to orient the dish properly.

It's REALLY easy AFTER your first few tries. However, even the first time you set things up it likely will take less than and hour of fiddling and you will be able to get that down to 20-30 minutes after a couple of tries.
With DirecTV I would not consider getting HD any harder than getting SD. The satellites are only separated by 3 degrees so if you set the proper skew (yes, you will learn what that is) and the tripod mount is plumb and level (most important!) it's just a matter of finding the 101 satellite. When you do, the others will be there as well. A bit of tweaking to get the best signal and you are watching TV. Considering you will only have to do this a couple of times per year even if it took a couple of hours it really wouldn't be a big deal.
Get a DirecTV SWM SL3 antenna, a good tripod and some good coax cabling and you just one coax to each receiver (using only 1 receiver makes it even easier). You can bring your DirecTV Genie from the house so all your recorded programs come with you and you can record more while camping/working. If you can get a 2nd coax to the 2nd TV you will also bring the mini Genie (client) from the house and plug it in there. No you have the same setup in your RV that you have at home!
