When will we get truly unlimited data from cell providers

Sounds good "as long as there is wifi". Problem with that is that many, if not the majority, of the places we stayed during the last extended trip had wifi that was available only close to the office, was there - but just barely, would fade in and out depending on the use (mostly morning and night)
