You can stop most if not all Windows updates by disabling the Windows Update service. The easiest way to get to services is to type "services" in the search box. Scroll down to Windows Update then right click on it. Select "Properties" then change Startup type to "Disabled".

When you want to do an update, you go through the same steps and change Startup type back to what it was originally. You then go into Settings and check for updates.
