When you want to do an update, you go through the same steps and change Startup type back to what it was originally. You then go into Settings and check for updates.
This works, except Windows will turn the service back on without letting you know. Thus did my laptop downloaded the giant full OS update while using my phone's hotspot, and ate up all my data for the month. Best to set it to "metered connection", at least then it only does critical security updates.
