Problem solved. I found the Arlo Security camera. They have a model that does not need a hotspot. The camera itself transmits directly on the 4g LTE network. There is a Verizon version and another company that I forget now. I just went onto my Verizon account online and ordered one there. Total cost was $380 including fees and sales tax. Then I'll pay $5 a month.
I downloaded the owners manual and they say if you have power the camera can be left plugged in all the time. It also comes with a "removable" battery that lasts up to 45 days. The nice thing about it being removable is you can buy a spare battery and have it charged. So even if you store your motorhome in a RV lot without power you can put the camera inside it and just go over once a month or so and swap the batteries.
The camera has motion detectors and will send you alerts when it detects motion. So this thing would be good to have even when traveling as you could set it on the counter of the motorhome when you leave for the day and it will act as an alarm while you're gone. That is assuming you have LTE coverage where you're camping. I'll report back on how well it works when I get it.
