It sounds like a great start. You're thinking things through, open to new ideas, listening to and considering your family's wants and needs - that all will lead to a positive end result.
Personally, the more towing capability the better. It leaves more options available in the future and overkill is better than "should handle" when it comes to towing. Remember, you could end up taking longer trips and towing into mountains, etc. - get something that will do that easily and you're set regardless. Many folks get what will work and then end up upgrading after a few trips because they don't feel comfortable.
