Thankyou for the really quick replies everyone -
I have called the different state DMVs (CA, TX, FL),and was told by several staff it was the individual County you are in that decides on their requirements for identification, for example in one part of TX I was told I'd need a SSN to get past the final stage of vehicle registration.
I checked the LLC option in Montana (not Nevada), which seemed workable but would increase my annual costs with their returns and fees and increase the insurance rates, so I'm trying the individual option if its possible.
Escapees RV looked very helpful if we end up buying in TX and I will write in their forum as suggested.
Lastly, roadside assist - I had overlooked that - I'll get the Good Sam offering as they have a great reputation.
