Suggestion: go where there are hookups and don't hook up. Play like you're in boonies to learn from experience. Then when batteries go dead, you fill holding tanks and run out of water it will be easy to fix. A week dry camping in boonies is NOT the ideal way to start the RV lifestyle. Too much to learn and too much to go wrong.
Don't run gen at night when sleeping. People die from CO poisoning every year.
The batteries, holding tanks, and water issues mentioned in first paragraph will happen in a week long trip, especially with two kids along.
