The assembly lines used for building RVs won't work to build a bare box.
Plus they must put certain things in to obtain RVIA certification. Without that the rig cannot be an RV.
That will restrict you from being able to use many camping locations bacause to do so you must have a "self-contained" camping unit.
An alternative to starting with a bare box trailer is to find a used TT in good structural condition, rip out the interior and rebuild the interior yourself. I've seen a couple done as you describe.
I caution you on the composting toilet. I've seen two of those in rigs, and they are not sufficient size to handle the waste from two people completely. Be sure to get a firm estimate of how quickly waste is processed and made safe for disposal.
