OP that looks like a very nice small RV. I think the best option would be to remove the sofa and put two wall-hugger Lazy Boy recliners in its place.
You could also remove the table/chairs and do the same but since your entry door and the bedroom doorway are on the same side, I believe the chairs would be in the way. However, if it would work there are small chairside tables available that would swing over your lap for your meal. One of those between the two recliners would work. The other person would use the fold out table at the sofa that is already there. Good luck and enjoy that new RV!
