To help with the insurance ask you UK service for a letter of introduction and driving/insurance claim history. I was prior US Navy transferred several times overseas (Japan and Australia) and having documentation from my prior insurance regarding my driving history kept the cost manageable.
You should be OK with your UK driver's license and a Passport considering you are not living here beyond six months. The international license acts more as a translation of you home country license but getting an one won't hurt.
Checking with the Escapees is probably your best information route. What you plan to do isn't much different than living in the coach full time. You will need an address in the state you intend to utilize before you purchase a coach. The seller will need the information for transfer of ownership. I think it would help to establish residency in the state where the coach will be stored when not in use. Middle America might be best considering your travel plans. Taxes are also a factor to consider.
Good luck and seeing North America thru a windshield of an RV is probably the best and lowest cost way of doing it (not considering the cost for the coach). You'll miss a lot of this side of the pond doing it in the more conventional manner.
