We generally just throw a dry dishtowel on the bottom of the fridge if we are going to empty it and turn it off, Generally when we winterize the camper. We leave it plugged in and on during the camping season along with stocked with the usual condiments, a few beers and softdrinks.
Might try sprinkling a box of baking soda on a plate and leaving it on a shelf inside the frig to help soak up some of the moisture (along with odors).
