In the last several decades of RVing, sailing, road tripping and other pass/waste times, we have very seldom made any reservation unless we knew that where we wanted to be would be crowded.
If your rig is capable of being self contained, then all the flat quiet places in the world are open to be campgrounds. So, carry a smartphone and RVParky and a few other apps and make it up as you go along. We find that we have to look for a dump and potable about every third day. That is, unless we know that this is going to be tight, we can go for five days. If we have a single night in almost any camp ground, we can have showers, dump and fill and be ready to go the next morning.
You can do this too, but you have to learn how to find what you need.
