With a small TT and being alone, 1000 AHs of battery and solar watts may be excessive. I'd wire heavy for additional panels but can't believe you'll need that much of either. I'm "light" at 240 AHs but not by that much. When I buy new batts I'll go 300 AHs and add another panel. Battery weight is also a consideration...tote only what you need.
I see lots of solo RVers and most of the time I are one. You'll be fine.
