An "A Liner" style popup would be towable with your Escape and sets up almost instantly - even at rest areas. No bed slides, just hinged side wall and spring assisted roof lift. Pricey, but ideal for your situation.
Not sure I'd tow more than maybe a small Scamp/Casita size fixed height TT with your engine size and short wheelbase.
Make sure you get one with trailer brakes and get a good brake control unit installed in the Ford. It's not up to stopping much more than it's own GVWR with it's own brakes. Just like an F150 really needs brakes (and maybe a wdh) to pull/stop a 6,000# trailer you need them when you are similarly close to your limits.
You won't be sleeping extra friends or kids in an Aliner or Casita though. Only a popup can get you that in the size/weight range you need. Even in a popup, you are probably limited to a 12 foot, low wall, non-slide size for comfortable towing. But that will seem HUGE inside compared to an Aliner or Casita.
