A good (but small) pop up is going to be your best bet and will give you the most space once it is opened up. But, you have to be able to open it up when you get home and let it dry out should you have to pack up when it gets dry. We've owned three pop-ups and they were a great way to camp when our boys were home. We went from a 8' box, to a 10' box and the Startream was a 12' box. For two people, a 10' box might be a good compromise. At the bare minimus, I suggest having your own porta-potti and some way of using it in the trailer. If you can find a unit that has the shower/potty combination and it isn't on too heavy of a trailer, that would be good. I suggest that you try to keep your loaded weight around 2,500 lbs. or so, and that could leave you room for a bike rack and a couple of bikes (I'm thinking a bike rack on top of the camper or mounted to camper frame). Our pop-ups came equipped so we could use the two burner stove outside, and we usually did all our cooking outside unless weather was a real issue.
Just do a lot of research and take time to look at as many different brands and units you can. Good luck!
Something like this would be my suggestion!
GVW of 2350 lbs. leaves enough margin ( I think....)for the limitations of your tow vehicle.
