You can also cook rice in advance; just finished doing that, cooled and ZipLoc bagged the rice into the freezer. Should you find something not on your menu to cook like say lobsters, on the road, just buy a big enough pot at a local thrift shop as it's less expensive than getting one from a supermarket mart.
I bought this one size fits all lightweight pot cover last year at one of those mall gourmet cook type shops last year. Works for every type of heat source 'cept wood fires(don't ask how I know...sigh):
