Hi Jonny,
You need to do an energy audit.
200 amp-hours of battery almost certainly is not enough for what you wish to do unless you become an energy miser.
120 watts of solar is enough to fully recharge 200 amps of battery bank between trips--and would cover parasitic loads during most of the day, when boodocking, extending the time between generator runs.
Solar kits are rarely a "good deal".
Disconnecting the battery while in storage is a good idea, but make sure to charge it before the rv "goes to bed".
The "big three" for converters are Progressive Dynamics, Iota, and Power Max. All three have advantages and any of them will meet your needs for faster recharging.
