I've never had a problem finding short term space in combined RV/trailer parks in small cities north of the Tampa area, away from the Kissimmee-Orlando-Daytona metroplex, and at least 15-20 miles in from the coast. Sometimes you can get even closer to the coast, and there is so much RV space around WDW that any overnight is pretty easy, but expensive.
Looking for space in a resort around Fort Myers, you should probably already be booked. The Keys, you might be waiting for someone already there to die.
State parks, forest campsites, I don't know, haven't tried, there are reservation systems to keep the parks booked up even when not full, and stays are limited.
