You won't hurt the fridge, it will just stop cooling until you get level again.
May I ask, how "unlevel" will you be? If you are only a few inches front-to-back, or side-to-side it probably will not affect the performance of your refer. If the distance is a a couple feet, then yea ... you've got problems.
Refers do not have to be 100% level. They can be off (I've heard 3 degrees), but mine has been much more than that and still worked OK. (Usually front to back not level though).
You might get an ice chest and load it with your cold food items. Pull the camper home, turn on the refer and see if it get's cold. If it does not, you have your cold items in a cooler and once you get on the road your refer will begin to cool down. As long as you don't have Ice Cream, this should work. And ... freeze everything ahead of time that needs to remain frozen, even if your RV refer is working.
