I can only speak for my Motorhome, a 32' Class C with 2 slides. Without running the cab A/C or the Generator to run the Rooftop A/C, I average 9 miles per gallon. With the A/C I get more like 8 miles per gallon (at 65 mph). Driving 72 mph, which is what I normally drive, I get more like 7.5 mpg. That is on flat ground.
I think for most large Class C motorhomes 8 mpg is realistic. You would be running relatively light since it is only you and probably an overnight bag, but 8 mpg is a good number to go with. Without other expenses figured in, you would be cutting it pretty close in a large Class C averaging 8 mpg. That's based on $3.25/gallon, which is what I just paid. That's the lowest it has been in a good while, so as gas prices go up, your gross goes down.
Unless gas prices continue to fall, most likely $600/1000 miles would be optimistic. However, considering you could easily drive 1000 miles across 2 days, $250/day is pretty decent.
