We often camp much the same as you. We decided on a C class a few years back. Went with a 2000. Do not want it to stand out to much setting out by it self on a back road while we are off at a walk in lake or stream so new would not work. We were able to choose between 2 and 4 wheel drive. Ground clearance depends on the rig you get and you can raise them some with larger tires ect. You can also get into some real off road rigs in the C and B+ classes.
