I would limit the dry weight of the trailer to be about 3500 lbs. at most. then when you lightly pack it, add some water, etc. will be under 5,000 lbs.
check out the Ascend line, they have several units that would work for you. much more liveable than a Casita which I looked at one time, stopped by the factory but the bath was too tight for me. also little storage.
an Aliner would also work for a low profile with no canvas to worry about.

Aliners feel a little claustrophobic to me unfortunately. And I plan to winter in it - at the least.
Did your Highlander tow your Ascend smoothly, including up - and down - steep grades? And can you tell me what kind of mpg you got? My 2011 does about 22 at its best, pretty much hwy only.
I get about 25.5 overall. 14 when towing the TT. When I was getting ready to tow the TT home for the first time, I had to pull it up a fairly long steep stretch of road over a mountain (eastern) and checked out that grade for room on the shoulder if and when in case. I saw there was NO shoulder but I zoomed right up that hill with no problems. I of course hit the hill at about 60 mph at the bottom. don't know why your car gets so poor mileage, mine might get 22 or so with a lot of around town driving.
my ascend A171RD would be ideal for one person. the A191RD weighs about 225 lbs. more and would be better if there were two using it. they do have a A231RBK that has a small slide but weighs 3,950 lbs. check them out. they have a lot going for them, azdel siding, NO rubber roof, etc.
