Have you noticed a variable or two? We each have different tolerances. Your time available and total distances that you want to cover are going to be limiting factors for you.
On a long trip we usually plan a long first day. Things within this distance can be visited on a long weekend. Departure can be 5-6 am usually adjusted to avoid any rush hour traffic of first big city. For a 1000 mi trip we'd shoot for a 600-400 mi in two days. For Alaska we did 1100 mi on day one but that was with a popup TC. For most a 12 hr day is very long and would be followed by a later departure time and shorter day.
Coming home don't plan on covering that first day distance to get back, your back bumper is dragging closer to the ground. We stop at campgrounds, Wal-Mart and truck stops just have to much commotion for us. Campgrounds are quieter and the people are friendlier. Fellow campers may give you idea's for a unplanned stop that could be the crowning jewel of your trip. One has us thinking of a trip around the coasts and borders of the entire country.
