I think "it" starts with searching the internet. Do a search on RV manufacturers and start drilling down the pages to see what they have. Look at the floor plans, then Google Search for that make and model of camper and click on "images" and you'll begin to see what's popular, what you like, and what you don't.
Then, after a while, you'll need to actually go and visit different dealerships that sell those make and models. You will, at first, begin to eliminate those campers you don't like, floor plans that don't work for you, ones that are too expensive, and your choices what's left will begin to narrow down.
I don't think it's the right time of year for RV shows, they are usually held between November and March, so dealerships are your best source to visit during this time of year right now.
Eventually, you'll narrow down a small handful of models, and then you'll need to do the math. Can your tow vehicle to it comfortably? What are the insurance options? Financing or paying cash? These types of things need to be factored in and will also drive your final decision.
Or, just go visit dealership, and when you step into the right one, you might have that "AH HA!" moment and you leave towing it behind your truck!
