OP here...My thoughts about cash same as yours. However they said NOT to show up with cash and have cashiers check. I have no idea why.
Many businesses don't like cash because it requires more security and special handling. Checks can sit within a desk as opposed to a safe until it's time to go to the bank. A check (of whatever ilk) is also easier to account for whether to the CPA, bank, client or government. Of course there is the temptation factor as well.
