Is this common? Seems dangerous to me. How do you guys deal with having to take a leak and not having to stop every 50/75 miles?

We get to go maybe 200 mi between stops, and we take the opportunity to walk around a bit, which makes getting back into the driver's seat easier.

At most it takes you 2 minutes to slow to a stop, switch drivers and get back up to speed. Does swapping drivers while maintaining speed really count as an acceptable risk?

Yep, it's like some who brag that they tow their RV at 85+ MPH. I guess RVing is a race to some..
That's why I like to travel the side roads, I can slow down and see America. :)
