Traveling the interstates is not seeing the USA. What do you intend to see along your northern route? You need to travel secondary roads to get to many 'must dos'.
You're not going to easily be able to travel the northern route on secondary roads in November/December with your RV. First, you need to carry chains and use them. They are mandatory in the West. Second, many things of interest will not be open that time of year and most likely, campgrounds will not be open along with dump stations.
In winter it's advisable to stay south of I-40 and preferably on I-10.
