Nobody has said much about the plumbing. If your motorhome is winter ready, with enclosed holding tanks that are heated by a duct from the furnace, you should generally have no plumbing problems so long as you use the furnace in the RV—which presumably you would be doing anyhow for comfort. Avoid leaving hoses hooked up when camping in cold weather—connect the water hose to fill the freshwater tank, and the sewer hose to drain the holding tanks, but avoid staying hooked up to city connections with the valves open. (This can be done with heated hoses and the like, but for traveling, that's not really worth the effort IMHO.)
As 2gypsies said, you are legally required to have chains to traverse many of the western mountain passes in winter. Depending on the state, you may be legally required to carry them even if you don't have any need to use them.
(As to those who suggest that 8 weeks is not enough time, I would venture to guess that they are retired and may be somewhat forgetting what it's like to have limited time off. 8 weeks will allow you to see a lot. There will still be a lot that you don't get to see. The same could be said about traveling for 8 months or 8 years.)
I personally don't intend to take my motorhome through winter conditions, primarily due to road salt. I certainly don't want to suggest that anybody else needs to follow the same regimen.
