Certainly you can build anything you want if it fits in the space. However, if you're talking about a lot of cabinets be aware of the weight you'll be adding. An overweight RV is a safety hazard and tires will blow out. Find out what the carrying capacity is for your trailer. That would include all your belongings and water if you carry it.
