Could you maybe try finding one that is slightly larger than what you have and enlarge the opening to suit? Google has a lot of options. If you end up going the route of enlarging the opening, ordinary woodworking tools with carbide blades will work but do not cut square corners as they will end up cracking (make them rounded). Need to get underneath to see how much width and depth you have to work with. Sinks are usually sized by outside dimensions of the lip that sits on the counter top.
Our corian counter top has an undermount sink but I am guessing that would be a lot of work to get an existing corian counter top prepped for an undermount conversion. If you have a local independent RV repair and part shop, they may be able to help.
There will be a sink out there that will work and it's a case of spending time searching the internet.
