We very rarely camp more than 24 hours without hookups, so water conservation is not an issue for us. We have both in our motorhome. Generally we always use paper, no matter what we are eating. We don't buy the cheap white paper plates that are just a little stronger than a paper towel. We buy good quality paper plates that stand up to knife cuts.
We usually use the real plates to serve the food and move it from the kitchen to the grill and back again. Almost all of our meals (sometimes even breakfast) are cooked on the grill or smoker. About the only time we use real dishes to eat on is if the meal includes something that just doesn't sit well on a small paper plate or if the combined meal is just too big for a small paper plate.
Do what works best for you and your marriage.
