Yes, very doable, and sounds like great fun. Having had the opportunity to take our GD all over the western and southern US. And three daughters tent camping for many years, I have a couple of thoughts.
1) no way in my experience can you hook a shoulder belt up to a MH for kids car seats, simply nothing to attach the belt to. ( so maybe not as safe as a car)
2) the car seats are a PIA to put in every day and take out every night, if you plan to use the dinette, to sleep on, or eat on. And you have to store them somewhere, we used the cab seats.
3) good news is the older child will enjoy the table to color on and so forth
4)Good news again, MH's have fridges and pantries full of snacks.
5) Car bingo, or the alphabet game are great fun, to play on the road.
6) Although my DW and I prefer state parks, your kids may not. They want to unwind those kid legs after a long day driving, and meet other kids. In travels with our GD, we are big fans of KOA's, as they have pools, play grounds and kid activities. KOA has an app, so you can decide where you want to go the next day and book it.
7) Kids love touristy things, look for things like that on you travels.
8) Junior Ranger program at national parks, they love that. They get badges, and are sworn in as a junior ranger by a real ranger.
9) don't be in a big hurry, see what you can, enjoy your time with them, stop at rest stops, play some Frisbee, run around.
With our daughters, youngest we every took one was 3 weeks. You are young, you have the energy. Go for it!!!
